BUCKWHEAT BANANA PANCAKES

Despite its name, buckwheat is not related to wheat and is gluten free. Buckwheat is a highly nutritious whole grain that many people consider to be a superfood. Among its health benefits, buckwheat may improve heart health, promote weight loss, and help manage diabetes. Buckwheat is a good source of protein, fiber, and energy. We serve these pancakes with huckleberries and maple syrup for a delicious + healthy ranch-style breakfast. And, we bake them! Super simple and should be added to your regular breakfast rotation.

INGREDIENTS

Dry

  • 1/2 cup buckwheat flour

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon baking soda

  • pinch of salt

Wet

  • 2 ripe bananas or about a cup, mashed, leaving some chunks

  • 2 Tablespoons oil (avocado, coconut, or olive oil)

  • 2 Tablespoons water (or plant milk)

  • 1 teaspoon vanilla

  • 2 teaspoons apple cider vinegar

INSTRUCTIONS

  1. Preheat the oven to 350F degrees. Prepare a sheet pan with silicon mats or parchment paper.

  2. Combine all the dry ingredients in medium bowl and whisk together to combine.

  3. Combine all the wet ingredients together in a bowl and mix to incorporate all the ingredients.

  4. Add the wet to the dry. Use a spoon to mix thoroughly.

  5. Pour the pancakes onto the sheet pan making 5-6 inch circles. Use the back of a spoon to spread them.

  6. Cook for about 15 minutes until the centers are done. Use a metal spatula to remove.

  7. Go crazy with your toppings! Serve with bananas, berries, cinnamon, coconut flakes, maple syrup, honey, etc. Add a nut butter if you like. It’s pretty hard to go wrong here!

  8. Leftovers store well in the refrigerator and can be popped in the toaster to reheat. They are also delicious when served cold, as a snack. Kids love them!

NOTES:

Eating buckwheat regularly can lower bad cholesterol. According to a 2005 study, buckwheat trypsin enzyme has antimicrobial, antibacterial effects and could protect against diabetes, hypertension and tumors!

Buckwheat has a high mineral and antioxidant content, resulting in several health benefits. Buckwheat contains more protein than rice and has higher essential amino acids, including lysine and arginine (essential for children).
